I’d like to take this opportunity to let EVERYONE know that the Morrisons medium salad box from the deli counter is now included in the £3 meal deal. I KNOW. I genuinely don’t think I’ve been this excited since I found out the Chuckle Brothers are playing Bestival (in 3 weeks! Eeep!), and anyone who knows me will understand how serious that makes it. And yes, I do realise how sad this excitement makes my life look. Just in case you wondered.
I made this life-changing discovery just yesterday whilst trying desperately to find a vaguely Slimming World friendly lunch before work. Where am I even going with this? Oh yes, one of the elements I chose for my salad was a saucy little 3 bean number – something I’ve been trying to find a Syn-free recipe for for SUCH a long time. So, last night, I decided to create one! It’s super easy, involves zero actual cooking, inexpensive, and – most importantly – bloody delicious too. I served mine with Syn-free chicken kebabs and a jacket potato for dinner, and again for today’s lunch with some low-Syn falafel (another new recipe I’ll be posting soon – keep your eyes peeled!).
For the salad:
1 tin red kidney beans, drained
1 tin butter beans, drained
1 tin black eyed beans, drained
1 tin white kidney beans, drained
1 tin sweetcorn, drained
5 spring onions, thinly sliced
1 large handful fresh coriander, chopped
A few fresh mint leaves, chopped
1 red pepper, diced
For the dressing:
1/2 bottle Hellmann’s Fat Free Vinaigrette
3 tbsp balsalmic vinegar
2 tsp sweetener
Salt & pepper to taste
1. Add each salad ingredient, one-by-one, to a large bowl (trust me, you want to go as large as you can – this recipe makes a LOT, and if your bowl is too small, you’ll have problems with mixing later on)
Red kidney beans
Black eyed beans
Mint & coriander
2. In a separate bowl, combine each dressing ingredient and season. Pour on top of your salad and mix well. Note: I’ve chosen Hellmann’s Fat Free Vinaigrette because it’s Syn-free, but you can change this if you like. Just remember to adjust the Syns if you’re following Slimming World!
That’s literally all there is to it! So quick, so tasty, and wonderfully versatile too! Take it to a BBQ as a Syn-free side dish, or in a Healthy Extra B pitta with your Healthy Extra A halloumi and a dollop of low-Syn hummus. Bloody beautiful.
